Mixed vegetable raita is the simplest raita to make on short notice and the good thing is that you can change the taste a bit by changing the vegetables.
|Preparation Time:||10 minutes|
|Chopped tomato||1/4 cup|
|Chopped cucumber||1/4 cup|
|Chopped red onion||1/8 cup|
|Chopped coriander leaves||1 tbsp|
|Roasted and ground cumin seeds||1/4 tsp|
|Chilli powder (optional)||1/8 tsp|
- Whisk yogurt so that there are no lumps.
- Add everything in the yogurt and mix.
- Garnish with coriander, tomato and cucumber and serve cold or at room temperature. Mixed vegetable raita is ready.
- Skip the vegetable you don’t like or you don’t have. Try replacing it with something you like.
Goes well with any curry and chapati.
