Pasta is a staple food of traditional Italian cuisine, with the first reference dating to 1154 in Sicily. Children all over the world love pasta. Just find the pasta shape that your kids love and they will even help you cook it. Vegetable Pasta is a basic pasta recipe for vegetarians.

Ingredients
| Pasta (any shape) | 100 gm |
| Red Onion | 1/2 cup Sliced |
| Broccoli florets | 1/2 cup |
| Grape or cherry tomatoes | 1/2 cup Sliced |
| Zucchini | 1/2 cup chopped |
| Fresh jalapenos (optional) | 1 Sliced |
| Canned marzano tomatoes | 1 cup |
| Finely chopped garlic | 1 tbsp |
| Dried oregano | 1 tbsp |
| Chili flakes | 1/2 tbsp |
| Fresh Basil Leaves | 30 |
| Olive Oil | 2 tbsp |
| Salt | 1/2 tsp |
| Parmesan Cheese | 1/4 cup |
| Crushed Black Pepper | 1/2 tsp |
Method
- Chop all the vegetables in small pieces and grill them for 15 minutes until slightly charred.
- Boil pasta as per package direction. While that’s boiling, make the sauce.
- Heat oil in a sauce pan. Add chopped garlic and saute till it starts changing color. Add oregano and chili flakes. Saute for a few seconds and then add canned tomatoes and salt. If you have whole tomatoes, crush them a bit. Cook until it gets thick sauce-like consistency.
- Add grilled vegetables and cook for a minute.
- Add cooked pasta, parmesan cheese and crushed black pepper. Add some water from the pasta pot if the mixture becomes too thick. Top it with fresh basil leaves.
- Vegetable pasta is ready to serve. Serve it hot with garlic bread (grill the bread with butter + fresh garlic + oregano + chili flakes).
