Thai Green Curry is based on coconut milk and fresh green chilies.

Ingredients
| Thai green curry paste | 2 tbsp |
| Spinach | 75 gm |
| Carrot | 1/2 cup cubed |
| Broccoli | 1/2 cup cubed |
| Shallots | 1/4 cup sliced |
| Eggplant | 1/4 cup cubed |
| Coconut milk | 2 cups |
| Palm sugar | 2 tbsp |
| Soy sauce | 1 tbsp |
| Lime juice | 1 tbsp |
| Fresh basil leaves | 8 to 10 |
| Vegetable Oil | 1 tbsp |
Method
- Heat oil in a wok. Add sliced onion and fry till they wilt.
- Add the tough vegetables so that they soften a bit. Saute for a few minutes.
- Add green curry paste and saute for a minute.
- Add coconut milk and a cup of water. When it starts to boil, lower the heat and let it cook for about 10 minutes.
- Add everything else and cook for a couple of minutes. Adjust the seasonings and turn off the heat.
- Thai green curry is ready to serve with hot rice.
Notes
- You can use any vegetables you like.
